How do I season the griddle before its first use?
Your carbon steel griddle is made from raw material, without any coating. To ensure optimal performance and extend its lifespan, it is essential to season it before first use.
Before using the plancha for the first time, it's recommended to season it to create a natural protective layer. To do this, start by heating the griddle for about twenty minutes. Once it's thoroughly heated, apply a very thin layer of oil (sunflower, rapeseed, or peanut) to the entire surface using a paper towel. Let it heat until the oil smokes slightly, indicating that it's polymerizing and forming an initial protective patina. Repeat this process two or three times. The plancha can then be used normally: with repeated use, the surface will darken and become increasingly non-stick.
Recommendations:
- Use vegetable oil (such as grapeseed oil) for seasoning and cooking, and save your olive oil for the Finish.
- Always handle the plancha with fireproof gloves, especially when adding wood to the firebox or when cleaning while hot.
How do I season the wok before first use?
Heat the wok by rotating and tilting it to the edges until it changes color.
Next, apply a thin layer of oil, heat to form a protective film and repeat 2 to 3 times to create a durable non-stick layer.
Why and how to create temperature zones?
A well-heated griddle allows you to manage several zones: the hotter center is perfect for searing meats, while the cooler outside allows you to gently cook fish or vegetables, or simply keep food warm.
The design of our Plancha fire pits allows you to offer a cooler area all around the griddle, allowing you to keep your food warm.
How long does it take to heat up the griddle?
Depending on the outside temperature and the thickness of the griddle, allow between 15 and 60 minutes. In warm weather, the temperature rises more quickly, while in winter, the process can take longer.
What temperature does the griddle reach?
On average, the temperature at the inner edge of the griddle exceeds 300°C, while the outer edge remains around 150°C.
Plancha fire pits - Fuel & ignition
What is the best method for starting a fire?
To turn on your Plancha fire pit For optimal results, start by using well-seasoned wood with a moisture content below 10%. This significantly reduces smoke and allows for more efficient combustion. Beech or oak wood is recommended, as it produces beautiful, thick embers; ash is also a good option.
Arrange the logs (ideally sized: approximately 10 x 35 cm) with the bark facing outwards, taking care not to exceed 5 cm below the surface of the griddle.
Once your small pile is formed, place a firelighter conforming to EN 1860-3 on top, then carefully light it with a long match. Never use alcohol or gasoline to light or rekindle a fire. Finally, remember to wear protective gloves: the different parts of the Plancha fire pit they quickly become very hot.
How do I turn on my Plancha fire pit faster?
To speed up the ignition of your Plancha fire pitYou can slightly open the drawer when starting the fire. This increases the airflow, allowing the fire to catch more quickly while reducing smoke.
Once the fire is well established, it is recommended to close the drawer. Leaving it open continuously would result in excessively rapid combustion, excessive wood consumption, and an unnecessarily high temperature rise in the cone.
By following these few simple steps, you will achieve a quick, controlled and safe ignition.
What type of wood should be used?
Choose a hardwood that is well-seasoned (less than 20% moisture content), such as beech or ash. Avoid softwoods or tropical woods, which can emit unwanted substances or cause excessive heat. Wood that is too wet or has a high bark content produces more smoke and burns poorly. Avoid species such as fir, sycamore, eucalyptus, or elm.
Can you use charcoal?
The use of charcoal is generally discouraged in a Plancha fire pit Plancha. This appliance is designed to work with wood, which generates a gradual, diffuse and well-distributed heat under the plate.
Conversely, charcoal produces more intense and localized heat, which can lead to uneven cooking, grime buildup on the cooktop, and eventually damage it. When used alone, it also does not efficiently heat the entire cooking surface.
For optimal performance, it is recommended to use dry wood. However, a small amount of charcoal can be added to supplement the wood to prolong the burning of embers.
What size logs are ideal?
Logs of 10 cm by 35 cm offer a good balance between efficient combustion and ease of handling. Avoid overly large pieces that lack oxygen in the center of the Plancha fire pitand therefore burn poorly. Some more compact models require shorter logs.
Do I need an additional ventilation system?
No, the natural draft from the center of the firebox is sufficient to feed the fire. No external ventilation system is necessary.
You can slightly open the ash drawer during the first few minutes of ignition; this will facilitate combustion by increasing the air supply and its circulation in the cone, and will reduce smoke.
Do not leave the drawer open during cooking.
How to safely extinguish the fire after use?
The safest method is to let the fire go out on its own.
Plancha fire pits - Cooking
What oil should I use for cooking?
Any vegetable oil will do.
Grape seed, sunflower, rapeseed... choose according to your taste. Just be careful not to overheat low smoke point oils.
Use olive oil only for the FinishIt is not suitable for cooking due to the high temperatures reached by the griddle.
What happens to the fat in food during cooking?
The fat flows towards the center of the Plancha fire pit and falls into the firebox, where it is burned by the embers. This natural system avoids residue and simplifies maintenance.
Plancha fire pits - Maintenance & cleaning
How to maintain the seasoning over time?
Seasoning is a thin protective layer that forms on your griddle and naturally improves with each use. To preserve it and extend the life of your griddle, season it regularly. Plancha fire pitA few simple steps are all it takes:
After each use, scrape off any food residue while the griddle is still warm, then wipe it with a cloth or paper towel. Next, apply a thin layer of oil (sunflower or peanut) over the entire surface to protect the steel from moisture.
Avoid cleaning with water or harsh chemicals, which could damage the seasoning. If this happens, don't worry: simply re-season the product lightly.
Over time, the griddle will darken and develop a patina: this is perfectly normal and even desirable. It improves cooking performance and creates a naturally non-stick surface.
How to dispose of ashes that are still hot?
You can let the ashes extinguish naturally at the bottom of the Plancha fire pitand dispose of them via the ash drawer.
What to do with the ashes after each use?
The large ash drawer allows you to empty it every 3-5 uses. Wait until the ash has cooled down completely and dispose of it with your general waste, following local waste management guidelines.
How do I clean the griddle?
After cooking, immediately remove any food residue with a spatula and push it towards the burner. To keep the hob clean, it is recommended to wipe it with a lightly oiled cloth afterwards.
Avoid letting a thick layer of residue build up, as it will be more difficult to remove. If this happens, pour a little room-temperature water onto the still-warm plate and then scrape it off with a spatula: the deposits will come off easily.
How to maintain the griddle on a daily basis?
After each cleaning, apply a thin layer of oil to prevent rust. A greasing spray is also a good option, as it remains effective longer and is suitable when the plate is cold. If the plate is not used for a while, it is recommended to oil it every 15 to 30 days. The level of corrosion depends heavily on the climate: salty and humid air aggravates it, while dry air is more favorable. Regular use allows a dark, smooth layer to form on the plate, which improves its comfort of use. If this layer flakes in places, simply remove the shavings with the spatula and rub again with clean oil.
How to maintain the structure of my Plancha fire pit
Maintenance depends on the type of Finish of your Plancha fire pitbut in any case, it remains simple and quick.
Corten steel structure
Corten steel requires almost no maintenance. It protects itself naturally with a patina that forms over time and acts as a barrier against corrosion.
This layer evolves gradually according to the environment and gives the Plancha fire pit its unique appearance.
For maintenance:
- Remove any deposits (dust, leaves) if necessary.
- Clean with a dry or slightly damp cloth.
Avoid chemical or abrasive products.
No special treatment is necessary: Corten steel protects and beautifies itself naturally.
Structure with Finish black
The black models are protected by a high-temperature paint, designed to withstand heat.
However, this Finish requires a little more attention:
- Avoid impacts, friction or scratches.
- Clean only with a soft, non-abrasive cloth
In case of scratching, the protection may be locally damaged and corrosion may appear.
For this purpose, we offer a touch-up bottle with a brush upon request, in order to easily correct the affected areas.
⚠️ Important: Exposure to salt air (within 20 km of the sea) can accelerate corrosion despite the paint. For this reason, use in coastal areas is not recommended.
How to remove oil stains from Corten steel?
During cooking, it is possible for oil to splash onto the base of the unit. On a Corten steel base, these stains cannot be completely removed. By simply wiping the entire surface with a cloth, the steel will absorb the oil and the base will become evenly colored. However, during rain, slightly greasy water may drip from the base, which can cause permanent stains on light-colored stone or wood surfaces.
Plancha fire pits - Frequent problems
My hob has become convex: what should I do?
If the surface of your plate bulges in the center, this indicates a defect in the steel pressing. In this case, it is advisable to contact your dealer to find an appropriate solution.
Why does my griddle turn black after a few uses?
This is normal and even desirable. The black color comes from the layer of oil that polymerizes with heat and becomes embedded in the microscopic imperfections of the steel. This natural patina improves cooking, reduces food sticking, and provides lasting protection against oxidation on the griddle. Over time and with repeated use, the surface becomes more uniform and cooking performance improves.
Rust is appearing on my griddle or grill, what should I do?
Rust on the plate or grate is normal on carbon steel and remains superficial. It appears mainly in cases of humidity, lack of oil, or infrequent use.
What to do?
A simple brushing or light sanding is all that's needed. After heating and oiling, the plate looks like new again.
Prevention
The more the griddle is used, the better it is protected: the oil creates a natural patina against rust.
Advice
After each use, clean the plate while it is still warm and apply a thin layer of oil.
In summary
Rust is not a defect, but a sign of living steel, designed to last if used and maintained.
Why is my Corten steel product not the same color as the one on the website?
Corten steel products undergo a controlled corrosion process. Upon delivery, an initial phase of corrosion has already begun, but it takes another six to twelve months for a complete protective layer to form. During this period, the steel's color may vary from the photos on our website, giving each Corten product a unique aesthetic.
Why does the color of Corten steel change?
The color of Corten steel naturally changes over time: this is a normal and desirable phenomenon that protects the metal against corrosion.
On a Plancha fire pitOnly the part exposed to intense heat actually changes color. The cone and plate closest to the fire may darken or take on deeper shades due to the high temperatures during cooking. In contrast, the base, being less exposed to heat, retains its original color.
This change does not affect the strength or durability of your Plancha fire pit : it helps to create a unique and aesthetic appearance.
My Plancha fire pit The black item is damaged, what can I do?
The black paint used is specially designed to withstand high temperatures, however, its resistance to UV and friction is more limited.
In the event of a scratch, the protection of the steel can be locally reduced, which can lead to the appearance of corrosion.
To prevent any spread, we offer, upon simple request, a small bottle of paint with a brush for local touch-ups.
To preserve your Plancha fire pit :
- Avoid prolonged impacts, scratches or friction.
- Clean only with a soft, non-abrasive cloth.
It is expressly stated that the use of Plancha fire pits Finish black water less than 20 kilometers from the coastline is not recommended.
Prolonged exposure to a saline environment is likely to cause corrosion, which is not covered by the warranty.

What are the differences between a stainless steel griddle and a carbon steel griddle?
Stainless steel doesn't rust, but it has the disadvantage of deforming more easily, requiring greater thickness, having a very high manufacturing cost, and possessing a lower heat capacity, which causes it to cool down more quickly.
